These Organic Spaghetti are made with an ancient variety of wheat known as Khorasan (Triticum Turanicum), an ancestor of modern wheat and grown in Italy since before Roman times. Subsequently it was replaced by other more modern varieties and was almost abandoned. During the 1990s, our organic farmers gave them a chance by promoting success with consumers attentive to their health and the Planet.
Khorasan, in fact, has never suffered the genetic alterations of more modern wheat varieties, often associated with intolerance problems, and today it is grown organically by our farmers who respect its life cycle, cultivating the earth with organic methods and harvesting it at the best of its nutritional values.
This wheat is transformed into pasta, by a certified organic producer, with the traditional bronze drawing method. This technique gives the pasta that graininess that keeps the sauce better. Ces spaghettis restent ferme à la cuisson ce qui n’est vraiment pas toujours le cas pour les pâtes.
