Description
In colonial America, kidney beans were grown in Louisiana by Acadian farmers and planted by Spanish settlers in the late 1700s.

Red kidney beans can be enjoyed hot as an accompaniment to dishes in sauce, vegetables or rice. They are generally used in many Mexican dishes: chilli con carne, Mexican salads, etc. Soak for 24 hours and drain. Then cook the kidney beans in water for 1 hour. Store in a cool, dry place away from light.
